Born of adversity

Sparkling wine was born of adversity—at the extreme reach of short growing seasons in northern France. A similar challenge is found in Canada’s Niagara Peninsula—a cool climate by any winemaker’s definition. To make wines here, you need skill, craft and brutish determination.
